We already have Google Apps for Education, including Postini (which was free when we signed up) but need to contact the sales people about a quote for archiving.

I would love, love, LOVE to begin using Gmail, or, Gaggle.net and their service which interoperates with GMail nicely.

It is amazing to me that more schools do not incorporate email into their curricula. If they did, this would be a non-issue. We would have found a way by now...

Just reiterating what you wrote near the very end and thought it needed to be stated again - do your due diligence and check up on any *state* laws that may apply to you. Whatever you may read about national laws, the retention period, what files need to be kept, etc. do vary from state to state.
